Weekly meal plan 3.14.11

We had a great weekend! After a very stressful week we were more than excited to welcome a relaxing Saturday. We were able to sleep in, which was great, then we got up and made breakfast burritos for lunch. After that we went to Lowes and bought some flowers to plant and also some rosemary and basil to pot and put on the back porch. The weather was so beautiful and it was nice to spend the afternoon in the cool sunshine. We cooked soup for dinner and relaxed the night away.
Sunday, I had the privilege to lead praise and worship at church. I am rarely nervous when I’m just up there to sing back up, but when I lead I definitely get butterflies. I think that is a good thing though because if I feel comfortable that means I need to try harder. I think God can move through our nerves more than our pride.

Here’s this weeks plan.
Tonight: beef fajitas
Tuesday: steak and potato cakes
Wednesday: slow cooker pulled pork sandwiches
Thursday: take out after practice
Friday: date night!

Is anyone else noticing the trees and flowers are starting to bloom? I am both delighted and scared when I see this. I can’t wait for spring, really. I love the warm temperatures that aren’t scorching hot. Minus the wind that comes with it I am all in favor. The reason I am scared is my little flowers are starting to bloom and I know our west Texas weather. I’m sure another cold front will come through and wreak havoc on my poor babies. Hopefully not!

In honor of Mardi Gras we will be having jambalaya on Tuesday! I love any reason to get dressed up and celebrate so we are going to have our own Fat Tuesday.

Here’s this weeks plan.
Tonight: pork chops and mashed sweet potatoes
Tuesday: jambalaya
Wednesday: baked ziti
Thursday: take out after practice
Friday: date night!

A couple of things:

  • I need a pedicure horribly.
  • Peanut butter should come with a spoon because I hate washing peanut buttery spoons.
  • I’m too old to stay up until 2:00 and get up early the next morning.
  • I laughed at the workout video “Yoga Booty Ballet” until I tried it. Then I cried.
  • I am fast fooded out. I will be cooking as much as possible this week. Is fooded a word? I’ll make it a word.

Here’s this week’s plan.
Tonight: rosemary crusted pork loin
Tuesday: chicken spaghetti
Wednesday: cowboy soup made in the crock pot
Thursday: leftovers after practice
Friday: date night

Happy Valentine’s day everyone! This is one of my favorite days of the year for a couple of reasons. First, I love a fancy date night. We are actually going to have two Valentine’s days this week. Tonight we are going to cook and have a nice dinner here at home then on Friday night we are going go go ahead and dress up and go out. The second reason I love Valentines day is I have a reason to give gifts (and get gifts).

This week’s plan is pretty simple. We are going to make tacos on Tuesday and if all works out well I will post our taco recipe on Wednesday. Here’s this week’s plan.

Tonight: lamb chops, lemon thyme rice and dessert (I’m splurging for Valentines day)
Tuesday: chicken tacos with pinto beans
Wednesday: grilled sandwiches
Thursday: take out after praise and worship practice
Friday: Valentine’s date night #2

Happy eating!

After a week of both of us sick with the flu I am happy to say I think we are both well again. I absolutely hate being sick. Not being able to move conflicts with my inability to sit still. I want to get up and move but I physically can’t. Not fun.

We had a roller coaster of a weekend. Saturday was a good day. Jace worked at the church all day putting up our new speakers and I took a girls road trip to Lubbock with my best friend Jamie for some retail therapy.

Sunday morning we found out that my great grandmother who was 99 years old passed away. If everyone could please keep my family in their prayers we would greatly appreciate it. A lot of my family will be making the trip to Arkansas for the funeral and the weather is supposed to get bad again. Also keep my memaw in your prayers. She is going up there early to take care of all the details.

This week’s meals are kind of a repeat of last week. Since we were sick we didn’t get to eat any of the food I had planned. Here’s this weeks plan.

Tonight: Tex-Mex pork chops with rice
Tuesday: chicken pasta in a cream sauce
Wednesday: Not sure
Thursday: take out after practice
Friday: girls/guys night with youth group

Happy eating!
