It’s official, I have cabin fever. I’m ready for a getaway. What’s worse is I’ve booked reservations for a mini vacation sometime in May, and I have to sit and look at the emails in my inbox all day long while counting down the days. PURE TORTURE!!!

Here’s this weeks meal plan.
Tonight: pork chops and tex-mex rice
Tuesday: chicken spaghetti and salad
Wednesday: Jace is putting together a chicken salad with a strawberry lemonade vinaigrette
Thursday: take out after practice
Friday: date night

Wednesday: grilling something on the patio, not sure quite yet what
Thursday: casserole made from the leftovers of the weeks meals
Friday: date night

Chocolate Banana Bread

I LOVE this recipe. It is really easy and it is great for getting rid of your bananas that are about to go bad.

Chocolate Banana Bread
adapted from Savory Sweet Life

1 stick of salted butter, at room temperature
1/2 cup sugar
1 egg
2 very ripe bananas, mashed
1/2 cup sour cream
1 tsp vanilla
1 tsp baking soda
2 tbs cocoa powder (I used dark chocolate because that’s all I had and it was delicious)
1 cup flour
1 cup chocolate chips

Preheat your oven to 350 degrees

In a stand mixer or a bowl with a hand mixer cream the butter and sugar until smooth. Turn the mixer down and stir in the mashed banana, sour cream and vanilla until mixed together. Add the baking soda, cocoa powder and flour in and run the mixer on low to medium until it is mixed in. I ran my mixer for a couple of minutes at this point.

Pour in your chocolate chips and mix just until they are incorporated.

Pour your batter into the container of your choice. I’ve made large loafs and the little bars. It will also make 2 mini loaf pans or muffins. The sky’s the limit!

Tonight: turkey and pesto croissant sandwiches with mac and cheese
Tuesday: clean out the pantry jambalaya. Note to all my Louisiana friends…ahem, Jamie… I understand this isn’t really jambalaya. I just didn’t know what to call it. It’s going to be a mixture of rice, sausage and all the leftover veggies in the fridge
Wednesday: beef quesadillas
Thursday: take out after praise and worship practice
Friday: date night
